Jaime Martin Del Campo and Ramiro Arvizu debut their fast-casual ode to a traditional Western Mexican dish with Flautas. Located in the Baldwin Hills Crenshaw food court adjacent to the full-service dining experience Mexicano, Flautas offers guests a quick yet satisfying bite to eat before shopping or a movie from the duo more commonly known as “Jaime and Ramiro,” the nationally acclaimed chefs leading the way in authentic and reimagined Mexican cuisine. Flauta, meaning “flute” in Spanish, refers to the long, slender shape of the restaurant’s signature rolled tacos, which are fried up crisp and served hot. Differing from the ubiquitous taquito, flautas are larger in size and, as is traditional in the chefs’ native Jalisco, come topped with various sauces, salsas, and moles. Sample flautas from the 14-item menu include:

·El Mercado, filled with chicken, Mexican crema, spicy tomatillo sauce, and topped with cotija cheese, inspired by Mercado Corona in Guadalajara, Jalisco, Mexico

·De Papa con Chorizo Hecho en Casa (Traditional Potato and Homemade Chorizo), topped with tomato, onion, guajillo chile, cheese, and chile de árbol sauce

·De Rajas de Chile Poblano con Queso (Poblano Chile Strips With Cheese), a Jalisco tradition that also includes potato, Mexican crema, and spicy green tomatillo sauce

·De Picadillo de Res (Beef Picadillo), slowly cooked beef stuffing with tomato, onion, and garlic, perfumed with oregano

·Norteñas (Northern Style), made with a flour tortilla stuffed with pork that has been cooked with almonds, raisins, and spices, traditional to Northern Mexico

·De Pollo con Mole Verde o Mole Poblano (Chicken with Green Mole or Mole Poblano), shredded chicken filling smothered in Jaime and Ramiro’s legendary Green Mole or Mole Poblano

·Cochinita Pibil, filled with roasted pork shoulder meat marinated with achiote bitter orange juice and spices

Flautas also offers a rotating selection of Aguas Frescas and Jaime and Ramiro’s signature Lemonade with Chia Seeds.
